Black Forest

A dessert of German origin, the Black Forest gateau is made with chocolate sponge cake, cream and Fabbri Amarena cherries. A rich and extremely mouth-watering dish. 

Black Forest


  • 1 l Fabbri Gran Cioccolato Base 
  • 50 g Nonna Rachele paste 
  • 100 g fresh mascarpone cheese (alternatively use Fabbri Mascarpone 40
  • 60 g whole milk 
  • Drained Amarena Fabbri to taste 
  • Fabbri Kroccant to taste 
  • whipped cream for garnishing to taste 

For the gelato  

Mix the Fabbri Gran Cioccolato base with Nonna Rachele Paste, the mascarpone and milk, then churn the mixture. 

For the garnish 

Create tufts of whipped cream on top of the gelato and top each with a Fabbri Amarena. During the extraction process, ripple the gelato internally and on the surface with Fabbri Kroccant and drained Fabbri Amarena, creating layers that recall the typical shape of the dessert. Finish with plenty of chocolate chips arranged vertically.
