Chocolate custard with Fabbri Babà and whipped cream

    (serves 4)  

    • 400 ml milk  
    • 100 ml liquid cream  
    • 4 egg yolks  
    • 150 g sugar  
    • 40 g potato starch  
    • 150 g 70% dark chocolate  
    • Fabbri Babà  
    • 100 ml liquid whipping cream 


    Beat the egg yolks with the sugar until frothy, then add the starch and mix well.   

    Bring the cream and milk to the boil in a small saucepan. Add the egg mixture and stir over the heat until the cream thickens. Now chop the chocolate into pieces and add it to the custard mixture, stirring quickly.   

    Allow the chocolate custard to cool and whip the cream in the meantime.  

    Serve the custard in bowls, accompanied by two Fabbri Babàs and a tuft of whipped cream.
