Tortellino Amarena Fabbri

Ingredients
  • 500 g shortcrust pastry  
  • 500 g puff pastry  
  • Amarena Fabbri to taste 
  • Delipaste Pistachio

Procedure 

Roll out the puff pastry in a pasta machine to a thickness of approx. 1 cm. Insert the shortcrust pastry, also rolled out in a pasta machine to a thickness of 1 cm, and fold it into three (as if it were butter). Leave to rest in the fridge for 10 minutes.  
Roll out the dough in the pasta maker again to a thickness of approx. 2-3mm. Cut out 4.5x4.5cm squares and place 1 Fabbri Amarena, previously drained and dried,  
in the centre. Using a piping bag, fill the inside of the Amarena Fabbri with Delipaste Pistachio. Close like a tortellino and bake in the oven at 190°C for around 10-15 minutes.
