This is the Fabbri 1905 space at Rimini's 41st Sigep, the most important trade fair in the sector, almost 1,000 square metres in "white and blue" full of ideas, solutions and products made in Bologna for gelato, pastry and beverage professionals. Entering the Fabbri area means taking a "Gran Tour" in the art of desserts, experiencing and discovering the new protagonists of the 2020 season.

There is a polarisation in consumption between those who seek health and lightness and those who wish to satisfy their senses. The common denominators are the demand for ever higher quality standards, the sustainability of the process and raw materials, the need to make products accessible to the growing number of people suffering from food intolerances or following specific diets. What's new The 2020 gelato shop novelties start from the Simplé line, which is enriched with three new proposals: Avocado, a fruit with many beneficial properties, Yogo-Greco, the super-trendy Mediterranean yoghurt of the moment, and the inimitable Amarena Fabbri, in a new Simplé version, with pieces of candied fruit inside. The attention to Superfoods continues with the "Cedar and Curcuma" marbling, using the "most popular spice of 2019". At their side, the great classics revisited in a modern key such as the Tutti Frutti marbling for Cassata Siciliana, and for those with a sweet tooth, the irresistible Snackoloso Bom Bon marbling, a hazelnut and cocoa cream with wafer and chopped hazelnuts. But the most curious novelty from Fabbri is the new Delipaste Nonna Rachele, an ultra-versatile flavouring paste that recalls the basic flavours of pastry - butter, eggs, flour and sugar - ideal for recreating all the flavours of traditional pastry, in a gelato version. Grandma Rachele, wife of the founder Gennaro Fabbri, handed down her recipes from generation to generation to the members of the Fabbri family who paid tribute to her by giving her name to the new Delipaste. Last but not least, there is the Supersoft! range, which is enriched with three new flavours loved by young and old alike: Strawberry, Caramel Salted-Butter and Nutty. On the pastry front Fabbri 1905 will amaze its guests with creations as delicious and satisfying as they are beautiful and irresistible. The 2020 Fabbri 1905 Pastry Recipe Book is signed by Maestro Francesco Elmi, Head Brand Ambassador of the company, who has successfully run a well-known pastry shop in the shadow of the Two Towers of Bologna for years. He will direct the numerous professionals in the huge open laboratory inside the stand where, for 5 days, public and private demonstrations will reveal news, recipes and new trends. Lifelong learning is increasingly important, and in this key, Fabbri 1905 will be bringing the Fabbri Master Class Training School to Sigep 2020 with top-level lessons, creating a real "temporary school" for pastry chefs, directed by Maestro Elmi. An area of 160 square metres that will host a busy calendar of daily lessons - theoretical and practical - that will offer professionals the opportunity to discover and practice the latest pastry techniques. Fabbri will also be the starting point for a delicious "world tour" led by Amarena Fabbri: from Japanese Mochi to the classic American Cheesecake, the timeless icon made in Bologna will seduce the public with unusual combinations that interpret the confectionery traditions of the world with creativity and skill.
