Pasteurised eggs with added sugar. Pastovopan contains 50% yolks and 46% sugar. Its peculiarity is that it is easy to store at room temperature, easy to use and bacteriologically safe. In addition, it is a product that gives consistency over time in terms of taste and stability of the finished product. Specially designed to ensure constant whipping power and naturally emulsifying power. Containing a high amount of yolk, it is characterised by the high presence of proteins and lecithin, thus offering a high whipping power. Pastovopan is ideal for confectionary preparations.
