At the ripe old age of 29, Sonia Balacchi was crowned Pastry World Champion, the first woman to be awarded the title. After studying at Rimini’s scientific high school, she chose the patisserie world as her professional identity and left to gain her high school diploma at the Riccione hotel management school. Her professional growth began with a course as a workshop assistant at an international training school. After working in several different workshops run by great chefs in Italy and abroad, Sonia began to specialize as a professional consultant and trainer for leading companies in the field. For two years, alongside her consulting work, as Senior Chef she managed to put one of the historic pastry-makers of the Romagna hinterland firmly back on the map. Her company was invited to a series of prestigious national and international events.
Since December 2016, Sonia has been running the Fabbri Master Class teaching team at Fabbri 1905 headquarters in Bologna, for fairs and demos at clients’ premises. As the new director of the school, Sonia coordinates and directs training for customers and for the Italian and foreign sales forces; she also helps out with research & development for new gelato and pastry products.
