Domenico Costanza was born in Bari on 23 May 1967. He began his training at a very young age working alongside a pastry-maker in Gravina di Puglia, where he lives to this day.
After working with various schools and top pastry chefs, learning the skills needed to make restaurant desserts, modern cakes, vegan pastries and savoury patisserie, he has worked as a Fabbri 1905 technician for over 10 years.
